Puff Pastry Waffles

The simplest recipe I've EVER made, these puff pastry waffles are simply sheets of puff pastry, cooked in a waffle iron. But I couldn't stop there so I highly recommend rolling them in cinnamon sugar and then smushing two together with a scoop of vanilla ice cream in between.
Cinnamon Sugar
In a bowl, stir together 100 grams of granulated sugar with 1.5 tablespoons of ground cinnamon. Set aside.
Puff Pastry Waffles
Cutting the pastry is dependent on the size of your waffle maker and your puff pastry. I only have this mini waffle maker, so I cut the one sheet of pastry into 9 equal squares. This way one square can be a tester and the rest make an even 4 ice cream sandwiches.
Defrost your puff pastry and heat the waffle iron. Cut the pastry into your desired size that will fit in the waffle iron, it can go basically all the way to the edges of the waffle imprint.
Place one sheet on the hot waffle iron and close the iron. Set a timer for 4 minutes and store the rest, covered in the fridge to keep cold.
After 4 minutes, check the pastry. You want it to be as golden brown as you can get it. Mine took about 5-6 minutes but yours may take more or less time.
Once cooked, remove the pastry from the iron. If coating in cinnamon sugar, transfer it to a plate or bowl with the cinnamon sugar and toss. Close the waffle iron to let it reheat and then cook the remaining pastry, following the above steps.
<strong>Assembling Vanilla Ice Cream Sandwiches</strong>
Immediately after cooking, toss the waffles in cinnamon sugar and then place on a wire rack to cool.
Allow them to cool completely before assembling.
Once cooked and cooled, place one large scoop of ice cream onto 4 of the waffles. *If using a full size waffle maker, you can always cut it into quarters or assemble as a giant ice cream waffle cake and then cut.
Take a second waffle and press it down firmly onto the top of each ice cream scoop until the ice cream squeezes out to the edges.
Enjoy immediately or place in the freezer on a plate or tray to prevent them from melting.
